For Hitchki, maintaining its lively cocktail experience amid changing restrictions meant innovating its offerings, enhancing takeaway and delivery models, and ensuring operational resilience.Talent retention and continuous skill development have been pivotal in maintaining service excellence. By staying agile, prioritizing guest engagement, and embracing a forward-thinking approach, we continue to scale while delivering memorable dining experiences.

Mirah Hospitality operates various brands across different segments of the hospitality industry. How do you ensure consistency in quality and service across such diverse portfolios?

Maintaining consistency across our brands, including Hitchki, is achieved through strong SOPs, rigorous staff training, and a commitment to guest satisfaction. While each brand has a distinct identity, they all embody Mirah Hospitality’s core principles—quality, innovation, and customer-centric service. At Hitchki, we emphasize a standardized yet dynamic approach, ensuring a balance between signature dishes and menu innovations that excite our guests. Technology plays a crucial role in quality control, while a dedicated leadership team oversees execution across locations, ensuring a seamless experience for every diner.

The hospitality industry has been heavily impacted by the pandemic. How has Mirah Hospitality adapted to these challenges, and what long-term changes do you foresee in the industry as a result?

The pandemic reshaped the dining landscape, and we adapted by diversifying our service models and enhancing customer convenience. Hitchki adapted by enhancing its digital presence, expanding delivery options, and introducing interactive cocktail experiences to keep engagement high.Safety and hygiene remain top priorities, with contactless payments and tech-enabled service enhancements becoming the norm. Moving forward, experience-driven dining, sustainability, and personalization will define the industry. Hitchki remains committed to innovation, curating community-driven events, and continuously evolving its space to offer unique experiences for modern diners.

What has been the most memorable milestone in your career at Mirah Hospitality, and how has that moment shaped your approach to leadership and innovation within the company?

A defining moment has been Hitchki’s rapid growth and its ability to redefine Mumbai’s resto-bar culture. Successfully expanding to multiple locations while retaining its quirky, nostalgia-infused identity was a key milestone. Emerging stronger post-pandemic reinforced the importance of agility, adaptability, and a strong team-driven culture. Our commitment to delivering unique, experience-led dining has been recognized through industry accolades and an ever-growing loyal customer base. These milestones continue to shape our leadership approach—focusing on innovation, sustainability, and delivering unparalleled hospitality.
