From the Taj to your own tables, how did that journey shape your philosophy?
Chef Aniket: The Taj taught me discipline, precision, and respect for ingredients. Starting Berlin Brew gave me freedom to experiment and trust my gut. I’ve learned to balance structure with instinct; perfection with personality

Berlin Brew is a rooftop beer garden in the heart of Mumbai. What inspired you to blend Berlin’s garden pub vibe with Indian flavours and culture?
Chef Aniket: Berlin’s beer gardens have this open, ‘come-as-you-are’ charm that I love. Mumbai already has the energy. I just wanted to create a space that matched it. Mixing Indian flavours into that global vibe felt like the most honest version of me.

Your menus strike a bold balance between comfort and creativity. How do you approach pairing food with your in-house craft beers? Is it instinct, science, or a bit of both?
Chef Aniket: It is, definitely, a mix of both! I start with a gut feeling, then dial in the flavours based on acidity, spice, and texture. The goal is to make sure neither the beer nor the food gets overshadowed.
What was the first dish you created specifically with a beer pairing in mind at Berlin Brew and which beer did it go with?
Chef Aniket: It was smoked chicken kheema sliders with our Belgian wit. The beer’s citrus notes cut through the fat, while the spice holds its own. That combo really set the bar for our future pairings
Casual dining is evolving fast. How do you ensure that Berlin Brew stays ahead of the curve without losing its soul?
Chef Aniket: We listen more than we follow trends. The menu keeps evolving, but the vibe stays grounded. It’s about staying playful without forgetting what makes people come back.
You’ve worked in refined hotel kitchens, and now you’re running a vibrant community space. How different is the energy in both, and which one do you thrive in more?
Chef Aniket: Hotel kitchens are controlled chaos; every move is calculated. Berlin Brew is alive and unpredictable in the best way. I feed off the energy here. It’s raw, real, and connected.

Your approach to food is hands-on and high on storytelling. What’s a dish on your menu right now that best reflects your journey or personality?
Chef Aniket: It’s fiery, a little indulgent, and has roots in two different worlds.

What’s next for you and Berlin Brew? Are there new flavours, formats, or even locations brewing on the horizon?
Chef Aniket: New beer styles with local ingredients are on the way. We’re cooking up collabs with regional bloggers and indie brewers and engaging in some beer activities. And yes, a new location might just be around the corner.
