Koji-Presso

Signature whisky-based cocktail from Gaijin, a chef-driven Japanese restaurant in Mumbai that reinterprets Japanese cuisine through the lens of reverence and rebellion. The bar is helmed by Nischal Suman — ranked among the Top 16 bartenders in India at World Class India 2024. 

Ingredients: Johnnie Walker Black Label, Bokka, Coffee & Vanilla Infusion, Shio Koji, Ume, Black Pepper, Chocolate Bitters, Coffee Foam

Whisky Used: Johnnie Walker Black Label

Description: Afternoon coffee, reimagined with a Japanese twist. This bold cocktail blends Johnnie Walker Black Label with Bokka coffee and vanilla infusion, layered with shio koji, ume, and a touch of black pepper for depth. Finished with chocolate bitters and a smooth coffee foam, it makes for a smoky and sweet sip.

Peach Punch Label

Ingredients :

  • 60 ml Johnnie Walker black label
  • 45 ml Pineapple juice
  • 30 ml Lemon juice
  • 3 Peach slices
  • Black pepper to garnish

Directions:

1. Muddle two peach slices in the bottom of a shaker.

2. Add whisky, lemon juice and ice, shake to mix well.

3. Place some ice cubes in anold-fashioned glass and strain the contents of the shaker over it.

4. Top with an ounce of pineapple juice and fresh-cracked black pepper.

5. Garnish and enjoy!

Deltin Skyline

Ingredients:

  • 60ml Whisky
  • 15ml Lime juice
  • 30ml Orange juice
  • 30ml pineapple juice
  • 10ml Almond syrup
  • 01nos Egg white (optional)
  • 45ml Red wine
  • Garnish with cherry and orange slice

Making procedure:

It’s a layered cocktail so we took a Rock Glass. Pour 60ml of whisky along with 15ml lime juice, 60ml orange juice, 60ml pineapple juice, 10ml almond syrup and 01 egg white(optional) into a shaker. Should be Dry Shaken. Pour the mixture in chilled Rock Glass and finally top up with 45ml of red wine slowly. There your Deltin Skyline is ready to serve.
