As soon as we were seated, Akash, the passionate beverage manager of Pebble Street Hospitality, came over and shared insights on the thoughtfully crafted cocktails. He expressed excitement over the launch of Blacklist Volume 3: The Art of Japan, following the success of previous editions. The menu, inspired by Nikkei’s rich art and culture, was curated to reflect Japanese traditions, offering patrons a distinct and immersive experience. We dived into a flavourful journey through eight exquisite creations. Join us.
Blacklist Volume III: The Art of Japan
HANKO
Art: Inspired by the traditional seals of Japanese royalty.
Ingredients: Sesame oil-fat washed Patron Reposado Tequila, Gari cordial, Umeshu, House Umami bitters
On the Palate: Seals the palate with exquisite, authentic Japanese flavours
SHODO
Art: Inspired by the fluid strokes of Japanese calligraphy.
Ingredients: Toasted Rice syrup, Ballentine’s 7-year whisky, House Sakura Liqueur, Lemon juice, Egg white
On the palate: The drink flows as smoothly as a calligrapher’s brush stroke. Each sip evokes harmony and balance mirroring ancient Japanese art.
KANAGAWA
Art: Inspired by Hokusai’s iconic “The Great Wave off Kanagawa.”
Ingredient: Blue pea Mezcal, Homemade Citrus Curacao, Floral liqueur, Lemon juice, Saline, Vegan foamer.
On the Palate: Captures the power and beauty of the ocean with a natural blue hue from pea flowers along with Mezcal’s smoky twist.
CHADŌ
Art: Reflects the traditional Japanese Matcha tea ceremony.
Ingredients: Havana Club rum, Matcha green tea powder, Yuzu juice, and Vanilla
On the Palate: This cocktail brings the meditative tea ceremony to your glass, albeit with Havana Club rum. Served in a traditional teapot, a delightful, slightly sweetened tea experience served with matcha macarons.
KŌGEI
Art: Inspired by the art of Japanese craftsmanship.
Ingredients: Peanut butter-washed Ballentine’s 7-year whisky, Strawberry & jalapeno pickle, Campari, Carrot Cordial, Lemon juice, and Ginger ale.
On the Palate: A flavoured rollercoaster feel that blends nuttiness, sweetness, and spiciness into a perfect harmony.
IKEBANA
Art: Celebrates Japan’s art of flower arrangement.
Ingredients: Beefeater pink gin, Maraschino, Sencha-rested Sake, Citrus acid solution.
On the Palate: Visually stunning, tastefully decorated and exuberantly flavourful, this cocktail is adorned with an edible flower and a custom berry paint. It’s a liquid flower arrangement in a glass.
DAIFUKU
Art: Named after a Japanese good luck dessert.
Ingredients: Absolut Vodka, Red kidney bean, Miso paste, and Vanilla
On the Palate: This dessert-inspired cocktail is a creamy delight. Sweet and chewy, balanced by vanilla notes and served in a ceramic cup, it’s like sipping on a traditional Japanese confection.

A symphony of Pan-Asian Flavours at FOO
Coming to the food, our adventure began with soul-warming soups—a perfectly balanced Foo Hot & Sour with tender tofu and crisp broccoli, alongside an aromatic Laksa brimming with succulent chicken, fresh bok choy, and earthy mushrooms.
For starters (hello, Thai lotus crisps), a delightful bar snack arrived golden and crackling, setting the stage for an exquisite sushi parade. The Nikkei Avocado Uramaki danced with creamy parmesan richness, while the Prawn Tempura Uramaki burst with fresh coriander notes and zesty Chimichuri. Delicate dim sum followed—pillowy Foo Bao stuffed with umami mushrooms and the Nikkei Gyoza’s perfectly seared chicken filling did not disappoint.
The mains showcased Japanese Fried Rice, kissed with blue butter and fresh cottage cheese, complemented by wok-tossed Pan-Fried Chicken noodles. The dessert snowballed into a sweet crescendo with the Black Marble Sesame Cheesecake and decadent Hazelnut Dome. Heavenly.
VERDICT
FOO is on the UP. One of the most elegant Asian tapas eateries where the service is as slick as the serving—and that’s saying something. The exquisitely crafted Nikkei libations are more than just a list of drinks; it’s an immersive experience that transports you to Japan, one sip at a time.
