At “The Portuguese Pour,” you showcased Coração Do Vale olive oil in ways that resonated with Indian palates. What was the biggest challenge and the biggest joy in marrying Portuguese ingredients with Indian culinary sensibilities?

The greatest challenge was understanding and respecting the authenticity of Portuguese ingredients while ensuring they resonated naturally with Indian palates. The greatest joy, however, was discovering how seamlessly the two culinary cultures complement one another. Both traditions celebrate fresh ingredients, family-style dining, and bold yet balanced flavours, making the fusion feel authentic rather than forced.

Extra virgin olive oil is often treated as a finishing ingredient, but you placed it at the heart of the dining experience. What makes a truly exceptional olive oil, and how can diners learn to appreciate its nuances the way they would a fine wine?

A truly exceptional extra virgin olive oil reflects its terroir, freshness, and the craftsmanship behind its production. It should offer a harmonious balance of fruitiness, bitterness, and peppery notes. I encourage diners to experience olive oil on its own—first by smelling it, then tasting it slowly and observing how its flavours evolve. Much like fine wine, every olive oil tells a story of its origin, harvest, and producer.

Food is often described as a universal language. Through this tasting series, what story were you hoping to tell about Portugal, and how did you translate that story onto the plate?

I wanted to share the story of Portugal’s rich culinary heritage, its deep connection to the land, and its unwavering commitment to quality ingredients. Through each dish, I sought to showcase the elegance of simplicity, allowing ingredients—especially Coração do Vale Extra Virgin Olive Oil—to express their unique character and shine on the plate.

You’ve worked with a wide range of ingredients and cuisines throughout your career. Was there a particular dish from the tasting menu where Coração Do Vale surprised even you with its versatility or flavour profile?

Yes, particularly in the Charred Sweet Potato Chaat and the Rustic Carrot & Cinnamon Cake. In both dishes, the olive oil not only enhanced flavour but also added structure, freshness, and complexity. Its versatility demonstrated that a premium olive oil can be equally impactful as an ingredient and as a finishing element.

Indian cuisine is known for its bold spices and robust flavours. Do you believe premium olive oils have a greater role to play in contemporary Indian cooking, and how do you see that evolution unfolding??

Absolutely. As Indian cuisine continues to evolve, chefs and home cooks alike are increasingly seeking ingredients that deliver both flavour and wellness. Premium extra virgin olive oil complements Indian spices beautifully, whether used in dressings, marinades, finishing touches, or carefully selected cooking applications. I believe its role in Indian kitchens will continue to expand significantly.

Great chefs are often storytellers as much as they are cooks. When designing an experience like “The Portuguese Pour,” do you begin with flavours, ingredients, memories, or the narrative you want guests to take home?

I always begin with the story I want guests to remember. Ingredients and flavours are important, but they serve a larger narrative. Once that story is defined, every dish becomes a chapter, contributing to an immersive culinary journey and creating a meaningful emotional connection with the guest.

As diners become more conscious about quality, provenance, and authenticity, what advice would you give to home cooks looking to elevate everyday meals using ingredients such as premium extra virgin olive oil?

Start with quality ingredients and use them thoughtfully. A premium extra virgin olive oil can transform even the simplest preparations—whether salads, vegetables, soups, or grilled dishes. Use it generously as a finishing touch and allow its natural flavours to enhance rather than overpower the ingredients.

If you could create a dream menu that celebrates the meeting of Portugal and India using just five ingredients, what would they be, and what story would that menu tell?

I would choose: Extra Virgin Olive Oil, Coconut, Tamarind, Seafood, Spices (particularly black pepper and chilli).
